Oh macaron you delicate delight! The basic cookie recipe may differ depending on the use of a French, Italian or Swiss meringue. We experimented with all three and preferred the results from the French method, the cookies taking on a perfect crisp outside, collapsing onto a soft delicate meringue. Most of our macarons are then filled with a flavored buttercream filling, chocolate ganache or, the eternal favorite, salted caramel.
